The unseen enemy in our everyday food

If wheat and dairy cause problem for you, if you are tired, often bloated after meal, itchy, depressed, have joint pain and brain fog-it is not only gluten cause of all these complains.
Two thousand years ago, the Roman philosopher Lucretius said: “ one’s man food is another man’s poison”.
Researches spent decades to discover that it is not only food allergy or food sensitivity, they discovered how our body interact with food on cellular level. They discovered protein molecule called lectin, lectins are found in many, many foods that we eat every day. Many reactions that we thought were result of food allergy or food sensitivity were triggered by lectins, they are:
Indigestion after meals, weight gain and difficulty to loose it, joint stiffness, fatigue, headaches, skin problems, respiratory problems-excess mucus, sinus problems, not-illness related coughing, brain fog, difficulty in concentration, memory problems, insomnia.
Lectins are sticky proteins molecules found in all living things, including animals and plants. Plants use them as natural defense system against invaders such as mold, fungus, parasites. Lectins work by attaching themselves to invaders to block the attack . Unfortunately, when you eat foods that contain lectins they are not destroyed by pepsin or hydrochloric acid in your stomach and attack lining of your stomach and small intestine. Since they are small molecules, they can easily penetrate intestine wall and go to bloodstream. Now they can go and bind with any tissue, with any organ and create wide array of symptoms…Lectins ignite inflammation and activate other immune responses. In his book Eat right for your blood type, Dr Peter D’Adamo explains how lectins from different food group react with different blood types. For example, people with type O blood extremely sensitive to lectins in wheat and dairy, people with type B –sensitive to chicken.
If you are intolerant to specific types of lectins, it means that your body can not stop lectins from attacking you, so for some reason you do not have genetic protection toward this specific type of lectins. It may be a result of long term emotional stress or just damage to your DNA by oxidative stress-part of our everyday life.
We do not forget about gluten, gluten is the tip of the iceberg, it is in wheat, barley, oat, rye, spelt and many products containing them. Some 30% of Americans are gluten sensitive, and some 81% have genetic predisposition toward gluten sensitivity. If gluten only in grains and food made with grains, lectins are everywhere. Wheat has lectin- it is WGA- wheat germ agglutinin, it is very small sized molecules that easily pass through intestinal wall and is very active in creating inflammation.

Foods that are high in lectins:
Grains such as wheat, rice, oats, quinoa, barley, rye, buckwheat
Legumes: beans, lentils, peanuts, soybeans
Seeds and nuts: almonds, walnuts, pumpkin and sunflower seeds ( It looks that nothing left!!!)
Oils made from peanuts, soy
Eggs
Dairy, chicken, seefood, fruits such as pomegranate and cantaloupe,
Vegetables espessially night shade vegetables ( tomatoes, peppers, eggplants, potatoes)
All Processed food loaded with lectins

WHY ARE LECTINS SUCH A BIG PROBLEM NOW?

Humans always eaten food with lectins, but agriculture and food processing changed for the last 100 years, these changes produced far more lectins in our diet and lectin sensitivity is much more common today because:
1.Today’s wheat is genetically modified. Wheat and bread products now contain up to 90% more gluten then the type that our grandparents eat.

2. Increased level of stress created increased level of cortisol, but cortisol suppress production of mucin and immunoglobulin A- they protect your intestine from lectins.

3.Increase in production of processed foods that contain a lot of food additives – they intensify effect of lectins.

Lectins can make you fat- they suppress production of cholecystokenin, hormone involved in appetite control, so you eat more and gain weight. Lectins actually, block Leptin receptors ( Leptin is recently discovered hormone that acts as opposite to lectins), so again it will cause increased appetite in weight gain.
