Gluten Sensitivity and How to Live with It


Many of your favored foods –pizza, bread, cookies were unknown for our ancestors, All of these delicious foods contain wheat, a grain not grown by man until recently-about 7000 years ago. Homo sapiens were on the planet 100,000 years, so people were completely fine without wheat. Today‘s wheat much higher content of gluten because it is mostly genetically modified, which makes it even more dangerous because genetically modified grains have ability to be toxic for the humans and set up chronic inflammation in the body which is cause of all chronic degenerative diseases. All wheat contains protein – gluten, the most dangerous part of it gliadin. Some people have genetic sensitivity to gluten/gliadin and develop celiac disease. Gluten found in wheat, barley, oat, rye, kamut, spelt and triticale. When people with celiac disease eat gluten, it triggers their immune system to attack lining of small intestine. This reaction causes chronic inflammation, as a result of this assimilation of vitamins and minerals is impaired and these people may develop malnutrition syndrome. Beside this, they may develop Leaky Gut Syndrome as a result of increased permeability in the small intestine. Unfortunately, this condition leads to multiple food allergies which do not make life enjoyable. Currently, the only real treatment for celiac disease is a lifelong gluten-free diet.
Celiac is the most common genetic disease in Europe. It has also been identified in people from South America, Near East, Cuba, North Africa. Recent studies indicate that as many as 1in 100 Americans of European descent may have the disease, although the actual diagnoses rate is 1 in 3,600. It is estimated that there are 1 million people in the United States with undiagnosed celiac. Celiac disease is the most misdiagnosed disease in America. The onset of celiac may be precipitated by viral, bacterial infections, surgery, stress, childbirth. There are several types of celiac disease, some of them present with gastrointestinal symptoms, some have no symptoms. Diagnosis of celiac disease will be established on the basis of presentation, presence of antibodies in the blood, sometimes biopsy of the small intestinal lining and improvement on gluten-free diet.
People with celiac disease may have following symptoms: diarrhea, constipation, bloating, skin rashes, joints and muscle pain, brain fog, thyroid problems, alopecia, infertility, depression, ADD, ADHD, miocarditis.
Why so many people are sensitive to gluten?
Unfortunately, we do not eat like our grand-grandparents, we consume tons of gluten containing foods such as breads, cookies, pasta, pizza, bagels, and a lot of packaged food that has gluten too. They ate much more fruits, vegetables, fish and meat and some grains, not vise versa. But now you can enjoy a cupcake, cookie, muffins, nice breads which baked from gluten free flour. You can buy gluten free flour mix as King Arthur, or make your own mix and have your favorite food! I want to give you some information on celiac disease and gluten free recipes.
Processed food that may contain gluten
Bouillon cubes, brown rice syrup, chips, candy, cold cuts, salami, French fries, gravy, imitation fish, matzo, rice mixes, sauces, soups, soy sauce, vegetables in sauce.

Hidden Gluten
Cereals, malt or malt flavoring, hydrolyzed vegetable protein, modified starch or modified food starch ( unless it is made from soy or corn), vegetable protein, stabilizer starch flavoring emulsifier hydrolyzed plant protein.

Gluten Free Food Resources

Gluten -Free Pantry ( Specializes in gluten-free all purpose flour and ready –made mixes for bread, pizza, cakes.
Bob’s Red Mill ( Specializes in gluten-free and organic flours and mixes.
Glutino ( Specializes in variety gluten-free products including breads, pasta, cookies, and other snacks.
( Many of their cold cuts and hotdogs are gluten-free.

Gluten-free Brown Rice Flour Mix
Brown rice flour 2 cups 6 cups
Potato starch (not potato flour) 2/3 cup 2 cups
Tapioca flour 1/3 cup 1 cup
This mix can be used for cakes, muffins, cookies, pies.

Carrot Spice Muffins

2cups brown rice mix
2/3 cup sugar
1Tsp baking powder and 1tsp baking soda
2 tsp cinnamon
½ tsp nutmeg
¼ tsp salt
1cup shredded carrots
½ cup walnuts
½ cup shredded coconut
½ cup milk
½ cup oil
2 large eggs
1tsp pure vanilla extract
Cinnamon sugar for garnish
Preheat oven to 350 degree, mix all dry ingredients and add milk, vanilla and eggs, combine all together and fill muffin pans 2/3 full. Sprinkle with cinnamon sugar, bake 18-20 min.
To make cinnamon sugar combine 2 Tsp sugar with ½ tsp cinnamon.
